Quinoa tabbouleh

I grew up in Eastern Europe where tabbouleh is very popular. Traditionally it is made with bulgur wheat that I can't have now as I am gluten intolerant. I discovered quinoa for myself a bit later than the trend but I fell in love with it. It is a great substitution for tabbouleh.

Ingredients

1 cup cooked quinoa
1 cup chopped Italian parsley
1 cup chopped tomatoes
¼ cup chopped red onion
juice of half medium lemon
Pinch of salt

Directions

  1. Precook quinoa ahead of time so it will cool before you use it in this salad. Check my recipe for how to cook perfect quinoa so you can get a nice fluffy result.
  2. Place the cooked quinoa in a bowl and add all the remaining ingredients.
  3. Dress with the juice of half lemon and salt to taste.
