Quinoa tabbouleh
I grew up in Eastern Europe where tabbouleh is very popular. Traditionally it is made with bulgur wheat that I can't have now as I am gluten intolerant. I discovered quinoa for myself a bit later than the trend but I fell in love with it. It is a great substitution for tabbouleh.

Ingredients
1 cup cooked quinoa
1 cup chopped Italian parsley
1 cup chopped tomatoes
¼ cup chopped red onion
juice of half medium lemon
Pinch of salt
Directions
- Precook quinoa ahead of time so it will cool before you use it in this salad. Check my recipe for how to cook perfect quinoa so you can get a nice fluffy result.
- Place the cooked quinoa in a bowl and add all the remaining ingredients.
- Dress with the juice of half lemon and salt to taste.
