Vegan salad with chickpeas pepper and quinoa
This vegan salad with chickpeas pepper and quinoa became one of my signature dishes. It’s light, great as a side dish with some protein or eaten by itself. This is my go to salad for my vegetarian and vegan friends.

Ingredients
2 cups of baby leaves spinach
½ cup cooked quinoa
½ cup cooked chickpeas
½ cup chopped marinated red peppers from jar
¼ cup roasted nuts and seeds
1 Tbsp cranberries
Pinch of salt
Directions
- Precook quinoa ahead of time, so it will cool before you use it in this salad. Check my recipe on how to cook perfect quinoa, for nice and fluffy results.
- In the big bowl lay the spinach leaves. Top us with cooked and cooled quinoa, chopped red peppers, chickpeas and sprinkle the nuts and seeds on top.
- Dress with the juice from the roasted pepper or your favourite salad dressing. Add salt to taste.
- Enjoy
Note: If you want to add some meat than roasted chicken pieces or beef can be a nice addition.
